Turkey has a long history in its cuisine and has evolved with learning’s from Asia and Europe. Few of the main stream Turkish dishes include pilaf (rice preparation), kofte & doner (mostly made of meat). Turkey is also famous for use of many of the ingredients like olive oil, oregano seasoning, parsley and thyme.

In this recipe I talk about Turkish Pide which is a flat bread dish, it originated in Turkey and can be found in nearly every town of this country, specially in the months of Ramadan. The word Pied has similarity to Bread and is made very similar to Pizza bread that we are used to. The pide can be filled with choice of meat or vegetables, however filling of minced meat is very common, the other choices could be bell peppers, tomatoes, mushrooms, chili etc.

Turkish Pide is a dish from Turkey and commonly filled with minced meat.

The making of Turkish Pide includes preparing a dough in advance to let it rise, on the other hand you can prepare the filling with your choice of meat and vegetables. Once both the preparations are ready, the dough is rolled, filled and made into a boat shaped before baking.

Generally 1 full pide depending on its size is good for a single person, it is best enjoyed hot as keeping it long in the open makes it moist and soft. The preparation is a delight for anyone who loves bread preparations and meat. I made generous fillings in the Pide and everyone just loved its taste to the core. Here is Turkish Pide Recipe for your use.

All you need is (makes 4-5 Pide’s)

For Dough

Olive oil – 1 1/2 tbsp

Active dry yeast – 3/4 tsp

Bread flour – 1 3/4 cup

Semolina flour – 1/4 cup

Warm water – 3/4 cup

Salt to taste

For Filling

Mutton minced – 300 gms

Olive oil – 2 tbsp

Onion – 1 /2 cup (cut in small pieces)

Red bell pepper – 1/2 cup (cut in small pieces)

Yellow bell pepper – 1/2 cup (cut in small pieces)

Green bell pepper – 1/2 cup (cut in small pieces)

Salt to taste

Black pepper powder- 1/2 tsp

For Assembly

Egg white – 1 (mixed in 1 tbsp water)

Mozzarella cheese – 1/2 cup (grated)

Chili flakes – 1 tbsp

Seasoning – 1 tbsp

Turkish Pide Recipe

Dissolve the yeast in warm water and keep aside for 10 min.

Mix yeast with bread and semolina flour, add salt and olive oil in a bowl and knead into a soft dough.

Put the dough on a flat surface and knead it at least 5-6 min more.

Cover and keep aside for half an hour, the dough will rise in size.

For filling

In a pan take the olive oil and fry onion and garlic until golden brown.

Add minced mutton, salt and black pepper powder and cook till nearly done.

Add red, yellow and green bell peppers and cook for another 2-3 min. Keep the filling aside.

For Assembly

Pre heat the oven to 350 C.

Brush the baking tray with little oil.

Punch the dough and make 4 to 5 equal balls.

Dust and roll the balls in an oval shape.

Keep a portion of filling in the center and join the ends to make a boat shape.

Sprinkle with mozzarella cheese.

Brush the dough with egg and water mixture.

Place on the prepared baking tray and bake for 20-25 min till the sides are golden brown.

Garnish with chili flakes and any preferred seasoning.

Serve hot.
